  • 1/4 cup shredded carrots
  • 1/4 cup sliced almonds (optional)
  • 1/4 cup crumbled feta cheese (optional)
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons plain Greek yogurt
  • Salt and pepper to taste (for dressing)

Instructions

  1. Season the chicken breasts with olive oil, salt, and pepper.
  2. Grill or pan-sear the chicken over medium heat for 6–7 minutes per side or until fully cooked. Let it rest before slicing.
  3. In a small bowl, whisk together Dijon mustard, honey, apple cider vinegar, Greek yogurt, salt, and pepper to make the dressing.
  4. In a large salad bowl, combine salad greens, cherry tomatoes, cucumber, red onion, shredded carrots, sliced almonds, and feta cheese.
  5. Top the salad with sliced chicken.
  6. Drizzle with honey mustard dressing and toss gently to combine.
