- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup shredded carrots
- 1/4 cup sliced almonds (optional)
- 1/4 cup crumbled feta cheese (optional)
- 3 tablespoons Dijon mustard
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 2 tablespoons plain Greek yogurt
- Salt and pepper to taste (for dressing)
Instructions
- Season the chicken breasts with olive oil, salt, and pepper.
- Grill or pan-sear the chicken over medium heat for 6–7 minutes per side or until fully cooked. Let it rest before slicing.
- In a small bowl, whisk together Dijon mustard, honey, apple cider vinegar, Greek yogurt, salt, and pepper to make the dressing.
- In a large salad bowl, combine salad greens, cherry tomatoes, cucumber, red onion, shredded carrots, sliced almonds, and feta cheese.
- Top the salad with sliced chicken.
- Drizzle with honey mustard dressing and toss gently to combine.
- Serve immediately or chill before serving.

- Use rotisserie chicken for a quicker version.
- Adjust the sweetness of the dressing by varying the honey quantity.
