Ingredients
Scale
Marinade
- ½ cup Dijon mustard
- ½ cup honey
- Juice of 1 lemon (approximately 3 tablespoons)
- 2 teaspoons minced garlic
- ½ teaspoon paprika
- ½ teaspoon kosher salt
- ½ teaspoon ground black pepper
- ½ – 1 teaspoon crushed red pepper flakes (adjust to taste)
Chicken
- 4 boneless, skinless chicken breasts
Garnish
- Fresh parsley, chopped (for garnish)
Instructions
- Marinate Chicken: In a bowl, whisk together Dijon mustard, honey, lemon juice, minced garlic, paprika, kosher salt, ground black pepper, and crushed red pepper flakes until well combined. Reserve ¼ cup of this marinade for serving.
- Coat Chicken: Place the chicken breasts in a large zip-top bag. Pour the remaining marinade over the chicken, seal the bag, and gently massage to ensure each piece is evenly coated. Refrigerate and marinate for at least 1 hour to infuse flavor.
- Preheat Oven: Preheat your oven to 400°F (200°C). Prepare a baking sheet by lightly greasing it to prevent sticking.
- Bake Chicken: Arrange the marinated chicken breasts on the prepared baking sheet. Bake in the preheated oven for approximately 25 minutes, or until the internal temperature of the chicken reaches 160°F (71°C) ensuring it is cooked through but still juicy.
- Finish and Serve: Remove the chicken from the oven and let it rest for a few minutes. Drizzle the reserved ¼ cup of marinade over the hot chicken breasts. Sprinkle chopped fresh parsley on top for a bright, fresh finish. Serve immediately and enjoy!
Notes
- Marinating the chicken longer, up to 4 hours, will deepen the flavor.
- You can grill the chicken instead of baking for a smoky taste. Grill over medium heat for 6-7 minutes per side until cooked through.
- Check the internal temperature with a meat thermometer for safe cooking.
- For a thicker glaze, simmer the reserved marinade in a small saucepan for a few minutes before drizzling.
- Pairs well with rice, roasted vegetables, or a fresh salad.
