Description

A flavorful and healthy meal made with marinated honey-lime chicken and fresh vegetables, all cooked together in foil packets for easy cleanup.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow squash, sliced
  • 1 zucchini, sliced
  • 1 tablespoon chopped fresh cilantro (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, salt, pepper, and paprika.
  3. Place chicken breasts in a large resealable bag or bowl and pour the marinade over them. Marinate in the refrigerator for at least 30 minutes.
  4. Cut 4 large sheets of aluminum foil and place a marinated chicken breast on each sheet.
  5. Divide the vegetables evenly among the packets, placing them around the chicken.
  6. Drizzle a little extra marinade over the veggies.
  7. Fold the foil over the chicken and vegetables to seal the packets tightly.
  8. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
  9. Carefully open the foil packets and garnish with fresh cilantro if desired. Serve hot.

Notes

  • Use heavy-duty foil to prevent tearing.
  • You can substitute other vegetables like carrots or asparagus based on preference.
  • This dish can also be grilled instead of baked.
