- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 tablespoons honey
- 2 tablespoons freshly squeezed lime juice
- 1 teaspoon lime zest
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow squash, sliced
- 1 zucchini, sliced
- 1 tablespoon chopped fresh cilantro (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, salt, pepper, and paprika.
- Place chicken breasts in a large resealable bag or bowl and pour the marinade over them. Marinate in the refrigerator for at least 30 minutes.
- Cut 4 large sheets of aluminum foil and place a marinated chicken breast on each sheet.
- Divide the vegetables evenly among the packets, placing them around the chicken.
- Drizzle a little extra marinade over the veggies.
- Fold the foil over the chicken and vegetables to seal the packets tightly.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
- Carefully open the foil packets and garnish with fresh cilantro if desired. Serve hot.
Notes
- Use heavy-duty foil to prevent tearing.
- You can substitute other vegetables like carrots or asparagus based on preference.
- This dish can also be grilled instead of baked.
