Honey Garlic Asian Chicken Kabobs are a delicious grilled dish featuring marinated chicken and vegetables in a sweet and savory honey garlic soy sauce.

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 4 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into chunks
- Skewers (wooden or metal)
- Sesame seeds and chopped green onions for garnish (optional)
Instructions
- In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the marinade.
- Place the chicken cubes in a resealable plastic bag or shallow dish and pour in the marinade. Marinate in the refrigerator for at least 1 hour, preferably 2-3 hours.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, bell peppers, and onion pieces onto the skewers alternately.
- Grill the kabobs for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Garnish with sesame seeds and chopped green onions if desired. Serve hot.
Notes
- Marinate longer for more flavor.
- Use a meat thermometer to ensure chicken reaches 165°F internally.
- Can be baked or cooked on a grill pan if grill is not available.
