- 1/2 cup unsalted butter
- 1 (11 oz) bag caramels, unwrapped
- 2 tbsp milk
- 1/2 tsp vanilla extract
- 4 cups crisped rice cereal
- 1 cup semi-sweet chocolate chips
Instructions
- In a large saucepan over medium heat, melt the butter and caramels together, stirring frequently until smooth.
- Add the milk and vanilla extract, stirring until fully incorporated.
- Remove the mixture from heat and gently fold in the crisped rice cereal until evenly coated.
- Using a spoon or your hands, scoop out portions and shape into round, flat discs. Place them on a parchment-lined baking sheet.
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each, until smooth.
- Drizzle or spread the melted chocolate over each disc, coating the tops evenly.
- Let the treats cool at room temperature or refrigerate until the chocolate sets.
Notes
- Use wax paper or parchment paper to prevent sticking.
- You can substitute caramels with caramel sauce, but texture may vary.
- Store in an airtight container for up to a week.
