Description

A chewy, chocolatey treat made with caramel, crisped rice cereal, and rich chocolate, reminiscent of the classic Little Debbie Star Crunch.

Ingredients

Units Scale
  • 1/2 cup unsalted butter
  • 1 (11 oz) bag caramels, unwrapped
  • 2 tbsp milk
  • 1/2 tsp vanilla extract
  • 4 cups crisped rice cereal
  • 1 cup semi-sweet chocolate chips

Instructions

  1. In a large saucepan over medium heat, melt the butter and caramels together, stirring frequently until smooth.
  2. Add the milk and vanilla extract, stirring until fully incorporated.
  3. Remove the mixture from heat and gently fold in the crisped rice cereal until evenly coated.
  4. Using a spoon or your hands, scoop out portions and shape into round, flat discs. Place them on a parchment-lined baking sheet.
  5. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each, until smooth.
  6. Drizzle or spread the melted chocolate over each disc, coating the tops evenly.
  7. Let the treats cool at room temperature or refrigerate until the chocolate sets.

Notes

  • Use wax paper or parchment paper to prevent sticking.
  • You can substitute caramels with caramel sauce, but texture may vary.
  • Store in an airtight container for up to a week.
