- Paper fortunes (about 2.5 inches long, optional)
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and line a baking sheet with a silicone mat or parchment paper to prepare for baking the cookies.
- Prepare Wet Mixture: In a medium bowl, whisk together the egg whites, vanilla extract, almond extract, and vegetable oil until the mixture is foamy but not stiff, ensuring a light base for the batter.
- Prepare Dry Mixture: In another bowl, sift together the all-purpose flour, granulated sugar, cornstarch, and a pinch of salt to evenly combine the dry ingredients.
- Combine Ingredients: Gradually add the dry ingredients to the egg white mixture and stir until smooth. Add water one teaspoon at a time to thin the batter until it has a consistency similar to pancake batter.
- Spoon Batter on Sheet: Using about 1 tablespoon of batter per cookie, spoon it onto the prepared baking sheet and use the back of a spoon to spread it into a thin 4-inch diameter circle. Work with 2–3 cookies per batch to allow time for shaping.
- Bake Cookies: Bake the cookies in the preheated oven for 7–9 minutes, until the edges become golden brown and the cookies are pliable enough to shape.
- Shape Cookies with Fortunes: Remove one cookie quickly with a spatula and flip it over. Place a paper fortune in the center, fold the cookie in half into a semi-circle, then bend it over the edge of a cup or bowl to create the traditional fortune cookie shape. Hold it for a few seconds to set.
- Cool Shaped Cookies: Place shaped cookies in a muffin tin to hold their curved shape as they cool and harden.
- Repeat Process: Repeat the baking and shaping process with the remaining batter until all fortune cookies are made.
Notes
- Work quickly while the cookies are hot and pliable to shape them properly before they harden.
- If cookies cool too quickly and become stiff, place them back in the oven for about 30 seconds to soften before shaping.
- For decoration, you can color the batter or dip the cooled fortune cookies in melted chocolate.
