Description

A flavorful and tender skirt steak marinated with fresh herbs and grilled to perfection, ideal for a quick and delicious dinner.

Ingredients

Units Scale
  • 1 1/2 pounds skirt steak
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, combine olive oil, garlic, rosemary, thyme, parsley, lemon juice, salt, and pepper.
  2. Place the skirt steak in a resealable plastic bag or shallow dish and pour the herb marinade over it. Seal or cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat grill or grill pan over high heat.
  4. Remove steak from marinade and let excess drip off.
  5. Grill the steak for 3–4 minutes per side for medium-rare, or to desired doneness.
  6. Let the steak rest for 5 minutes before slicing against the grain.
  7. Serve hot with your favorite side dishes.

Notes

  • For a more intense flavor, marinate overnight.
  • Can be cooked on a stovetop grill pan if outdoor grilling is not available.
  • Best sliced thinly against the grain to ensure tenderness.
