- 2 lbs ground bison
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 (15 oz) cans diced tomatoes
- 1 (15 oz) can tomato sauce
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup beef broth
- 3 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add chopped onion and garlic and sauté until fragrant, about 3 minutes.
- Add ground bison to the skillet and cook until browned. Drain any excess fat.
- Transfer the cooked bison mixture to a slow cooker.
- Add the bell peppers, diced tomatoes, tomato sauce, kidney beans, black beans, and beef broth.
- Stir in chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Stir well before serving and adjust seasoning if needed.
Notes
- Feel free to substitute bison with lean ground beef or turkey.
- For a spicier chili, increase cayenne pepper or add chopped jalapeños.
- This chili tastes even better the next day as flavors continue to develop.
