Description

A rich, flavorful chili made with lean bison meat, beans, and spices, slowly simmered to perfection in a crockpot for a comforting and nutritious meal.


Ingredients

  • 2 lbs ground bison
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 (15 oz) cans diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup beef broth
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and garlic and sauté until fragrant, about 3 minutes.
  2. Add ground bison to the skillet and cook until browned. Drain any excess fat.
  3. Transfer the cooked bison mixture to a slow cooker.
  4. Add the bell peppers, diced tomatoes, tomato sauce, kidney beans, black beans, and beef broth.
  5. Stir in chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Stir well before serving and adjust seasoning if needed.

Notes

  • Feel free to substitute bison with lean ground beef or turkey.
  • For a spicier chili, increase cayenne pepper or add chopped jalapeños.
  • This chili tastes even better the next day as flavors continue to develop.
