Egg Mixture

  • 10 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt

  • 1 pound Italian sausage
  • 3 cups fresh spinach

Cheese & Oil

  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil


Instructions

  1. Preheat the Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook the Sausage: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the Italian sausage and cook until it is browned and fully cooked through, approximately 6–8 minutes. Once done, remove from the skillet and transfer to a plate.
  3. Sauté Mushrooms and Spinach: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and cook for about 5 minutes until they are browned. Then, stir in the fresh spinach and sauté until just wilted. Remove the skillet from heat.
  4. Mix Eggs and Seasonings: In a large bowl, whisk together the 10 large eggs, 1/2 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until the mixture is smooth and well combined.
  5. Combine Ingredients: Add the cooked sausage, sautéed mushrooms and spinach, and shredded mozzarella cheese to the egg mixture. Stir thoroughly to evenly distribute all ingredients.
  6. Transfer to Baking Dish: Pour the combined egg and mixture into the prepared baking dish and smooth the top evenly.
  7. Bake the Casserole: Place the baking dish in the preheated oven and bake for 30–35 minutes, or until the center is just set and the edges are golden brown.
  8. Cool and Serve: Remove from the oven and let the casserole cool for about 5 minutes before slicing and serving.
