Description

Hearty Farmers Casserole is a satisfying breakfast dish made with hash browns, eggs, cheese, and ham, perfect for feeding a crowd or meal prepping for the week.


Ingredients

  • 3 cups frozen hash brown potatoes, thawed
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup shredded Monterey Jack cheese
  • 1 cup cooked ham, diced
  • 1/4 cup chopped green onions
  • 4 large eggs
  • 1 (12 oz) can evaporated milk
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Cooking spray

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray.
  2. Spread the thawed hash browns evenly in the bottom of the prepared baking dish.
  3. Sprinkle the cheddar cheese, Monterey Jack cheese, diced ham, and chopped green onions over the hash browns.
  4. In a medium bowl, whisk together the eggs, evaporated milk, salt, and black pepper.
  5. Pour the egg mixture evenly over the ingredients in the baking dish.
  6. Bake for 45 to 50 minutes, or until the center is set and the top is lightly browned.
  7. Let it rest for 5 minutes before slicing and serving.

  • You can prepare this casserole the night before and refrigerate overnight before baking.
  • Substitute ham with cooked sausage or bacon for variation.
