Instructions
- Brown the chicken: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook for 5 to 6 minutes, stirring occasionally, until they are lightly browned. Remove the chicken from the pot and set aside.
- Sauté aromatics and vegetables: In the same pot, add the diced onion and minced garlic. Cook for 2 to 3 minutes until softened and fragrant. Then, stir in the carrots, celery, and potatoes and sauté for an additional 5 minutes to develop flavor.
