Description

A hearty and flavorful cabbage soup featuring tender cabbage, savory ground beef, and a rich blend of tomatoes and spices. Perfect for a comforting meal that is easy to prepare in under an hour.

Ingredients

Scale

Vegetables

  • 1 large cabbage, chopped
  • 2 small onions, diced
  • 1 large celery stalk, finely chopped

Proteins

  • 1-2 pounds ground beef

Pantry Items

  • 2 cans stewed tomatoes
  • 1 pouch Lipton Onion Soup Mix (any flavor)
  • Water (enough to fill saucepan halfway)
  • Spices of your choice (such as salt, pepper, paprika, garlic powder)

Instructions

  1. Boil Water: Begin by filling a large saucepan halfway with water and bring it to a boil over medium-high heat.
  2. Cook Vegetables: Add the chopped cabbage, diced onions, and finely chopped celery to the boiling water. Reduce heat and simmer until the vegetables start to soften, about 10-15 minutes.
  3. Brown Ground Beef: While vegetables are simmering, heat a separate skillet over medium heat. Add ground beef and cook, stirring frequently, until fully browned and no longer pink inside. Drain any excess fat from the skillet.
  4. Add Tomatoes and Soup Mix: Stir in the two cans of stewed tomatoes and the entire pouch of Lipton Onion Soup Mix into the saucepan with the softened vegetables, mixing thoroughly.
  5. Combine Beef with Soup: Add the cooked ground beef into the saucepan with the vegetable and tomato mixture. Stir well to combine all ingredients.
  6. Simmer Soup: Allow the soup to simmer together for an additional 5-10 minutes to blend the flavors and heat through completely.
  7. Season and Serve: Taste the soup and season with your choice of spices such as salt, pepper, or herbs to your preference. Serve the soup hot and enjoy.

Notes

  • You can adjust the amount of ground beef depending on your preference for a meatier or lighter soup.
  • For a spicier soup, add crushed red pepper flakes or a dash of cayenne pepper.
  • Using low-sodium stewed tomatoes can help control the salt content.
  • Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 1 month.
