Description

A rich and comforting casserole combining ground beef, tomato sauce, pasta, and creamy cheese layers, perfect for family dinners or meal prep.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 (6 oz) can tomato paste
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 2 cups cooked egg noodles
  • 1 cup sour cream
  • 1 cup small curd cottage cheese
  • 1/2 cup chopped green onions
  • 1 1/2 cups shredded cheddar cheese
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
  3. Add chopped onion and garlic, and cook until soft and fragrant, about 3-4 minutes.
  4. Stir in tomato sauce, tomato paste, salt, pepper, oregano, and basil. Simmer for 10 minutes, then remove from heat.
  5. In a separate bowl, mix sour cream, cottage cheese, and green onions together.
  6. Spread cooked egg noodles evenly in a 9×13 inch baking dish.
  7. Layer the cheese mixture over the noodles.
  8. Spoon the beef and tomato sauce mixture over the cheese layer.
  9. Sprinkle shredded cheddar cheese evenly over the top.
  10. Bake in preheated oven for 25-30 minutes, or until heated through and cheese is bubbly and golden.
  11. Let rest for 5 minutes before serving.

Notes

  • You can substitute ground turkey for a leaner version.
  • Make ahead and refrigerate up to 2 days before baking.
  • Freezes well for up to 3 months.
