Ingredients
Scale
Meat and Aromatics
- 1 lb ground beef
- 1 onion, chopped
- 4 garlic cloves, minced
Broth and Vegetables
- 4 cups beef broth
- 1 can pinto beans, rinsed and drained
- 1 (14 oz) can diced tomatoes, drained
- 2 cups chopped potatoes
- 1 (4 oz) can diced green chilis
- 1 cup frozen mixed vegetables
- 1 cup frozen corn
Spices and Seasonings
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Optional Toppings
- Shredded cheese
- Hot sauce
- Sour cream
- Chopped green onion
Instructions
- Prepare Crockpot: (Optional) Line your crockpot with a plastic liner to make cleanup easier and prevent sticking during cooking.
- Brown the Beef: Heat a large skillet over medium-high heat. Add the ground beef and cook it, breaking it into small pieces as it browns. Once fully cooked, drain any excess grease to keep the soup from becoming too greasy. Transfer the beef into the crockpot.
- Add Vegetables and Broth: Add chopped onion, minced garlic, beef broth, rinsed pinto beans, drained diced tomatoes, chopped potatoes, diced green chilis, frozen mixed vegetables, frozen corn, cumin, chili powder, salt, and pepper into the crockpot with the browned beef.
- Slow Cook: Cover the crockpot and cook on low for 2 to 3 hours or on high for 1 to 2 hours. Cooking longer allows the flavors to meld together for a richer taste. Check seasoning and adjust salt and pepper if needed.
- Serve: Ladle the hearty cowboy soup into bowls and top with shredded cheese, a splash of hot sauce, a dollop of sour cream, and chopped green onions for extra flavor and garnish.
Notes
- Using a crockpot liner is optional but recommended for easy cleanup.
- You can substitute ground turkey or chicken for a leaner option.
- If you prefer a thicker soup, mash some of the beans or potatoes before serving.
- Adjust spice levels with more or less chili powder and hot sauce to suit your taste.
- This soup keeps well in the fridge for up to 3 days and freezes beautifully.
