- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 zucchini, chopped
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 teaspoon turmeric powder
- 1/2 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (or to taste)
- 6 cups low-sodium chicken broth
- 2 cups cooked shredded chicken breast
- 2 cups baby spinach
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté for 2-3 minutes until fragrant.
- Stir in carrots and celery and cook for another 3-4 minutes.
- Add zucchini, broccoli, and cauliflower and sauté for 3 minutes.
- Sprinkle in turmeric, ginger, black pepper, and salt. Stir well.
- Pour in the chicken broth and bring the soup to a boil.
- Reduce heat and let simmer for 15 minutes, or until vegetables are tender.
- Add the shredded chicken and spinach. Simmer for 5 more minutes.
- Stir in lemon juice and garnish with fresh parsley before serving.
