- 4 chicken leg quarters
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, sliced
- 4 garlic cloves, minced
- 1/2 cup low-sodium chicken broth
Instructions
- Pat the chicken leg quarters dry with paper towels.
- Rub them with olive oil and season with garlic powder, onion powder, paprika, thyme, salt, and black pepper.
- Place the carrots, celery, onion, and garlic at the bottom of the crockpot.
- Lay the seasoned chicken leg quarters on top of the vegetables.
- Pour chicken broth around the edges.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender and fully cooked.
- Optionally, broil chicken in the oven for 5 minutes for crispy skin before serving.
Notes
- Remove skin for lower fat content if desired.
- Add fresh herbs like rosemary or parsley for extra flavor.
- Use bone-in chicken for maximum tenderness and flavor.
