Ingredients

  • 4 chicken leg quarters
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 1/2 cup low-sodium chicken broth

Instructions

  1. Pat the chicken leg quarters dry with paper towels.
  2. Rub them with olive oil and season with garlic powder, onion powder, paprika, thyme, salt, and black pepper.
  3. Place the carrots, celery, onion, and garlic at the bottom of the crockpot.
  4. Lay the seasoned chicken leg quarters on top of the vegetables.
  5. Pour chicken broth around the edges.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender and fully cooked.
  7. Optionally, broil chicken in the oven for 5 minutes for crispy skin before serving.

  • Add fresh herbs like rosemary or parsley for extra flavor.
