Description

A hearty and comforting Hamburger Soup with Macaroni, also known as Goulash Soup, made with ground beef, vegetables, and elbow macaroni in a flavorful tomato broth.


Ingredients

  • 1 lb ground beef
  • 1 cup elbow macaroni, uncooked
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 1 cup frozen corn
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, and sauté until softened.
  2. Add ground beef and cook until browned. Drain any excess fat.
  3. Stir in diced tomatoes, tomato sauce, beef broth, carrots, celery, corn, basil, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until vegetables are tender.
  5. Add elbow macaroni and simmer for an additional 10-12 minutes, or until pasta is cooked.
  6. Adjust seasoning if needed and serve hot.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • Use whole wheat pasta for added fiber.
  • Leftovers store well and taste even better the next day.
