Description
A hearty and comforting Hamburger Soup with Macaroni, also known as Goulash Soup, made with ground beef, vegetables, and elbow macaroni in a flavorful tomato broth.

- 1 lb ground beef
- 1 cup elbow macaroni, uncooked
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 4 cups beef broth
- 1 cup frozen corn
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, and sauté until softened.
- Add ground beef and cook until browned. Drain any excess fat.
- Stir in diced tomatoes, tomato sauce, beef broth, carrots, celery, corn, basil, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, until vegetables are tender.
- Add elbow macaroni and simmer for an additional 10-12 minutes, or until pasta is cooked.
- Adjust seasoning if needed and serve hot.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Use whole wheat pasta for added fiber.
- Leftovers store well and taste even better the next day.
