Description

A flavorful and hearty Ground Turkey Taco Casserole made with lean turkey, beans, cheese, and taco seasoning, perfect for a family dinner or meal prep.


Ingredients

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups cooked rice (white or brown)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup salsa
  • Salt and pepper to taste
  • Optional toppings: sour cream, green onions, cilantro, jalapeños

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until softened, about 3-4 minutes.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Add ground turkey and cook until browned, breaking it up with a spoon, about 6-8 minutes.
  5. Stir in taco seasoning and water. Simmer for 2-3 minutes.
  6. Add black beans, corn, diced tomatoes with chilies, and salsa. Stir to combine.
  7. Mix in the cooked rice and half of the shredded cheese. Season with salt and pepper to taste.
  8. Transfer the mixture to a greased 9×13-inch baking dish.
  9. Sprinkle the remaining cheese on top.
  10. Bake uncovered for 15-20 minutes, or until the cheese is melted and bubbly.
  11. Let cool for a few minutes before serving. Add optional toppings if desired.

Notes

  • Can be made ahead and refrigerated before baking.
  • Swap rice for quinoa or cauliflower rice for a lower carb version.
  • Use low-fat cheese to reduce calories and fat.
  • Leftovers can be frozen for up to 2 months.
