A flavorful and hearty Ground Turkey Taco Casserole made with lean turkey, beans, cheese, and taco seasoning, perfect for a family dinner or meal prep.

- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups cooked rice (white or brown)
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup salsa
- Salt and pepper to taste
- Optional toppings: sour cream, green onions, cilantro, jalapeños
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until softened, about 3-4 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Add ground turkey and cook until browned, breaking it up with a spoon, about 6-8 minutes.
- Stir in taco seasoning and water. Simmer for 2-3 minutes.
- Add black beans, corn, diced tomatoes with chilies, and salsa. Stir to combine.
- Mix in the cooked rice and half of the shredded cheese. Season with salt and pepper to taste.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Sprinkle the remaining cheese on top.
- Bake uncovered for 15-20 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving. Add optional toppings if desired.
Notes
- Can be made ahead and refrigerated before baking.
- Swap rice for quinoa or cauliflower rice for a lower carb version.
- Use low-fat cheese to reduce calories and fat.
- Leftovers can be frozen for up to 2 months.
