Description

Hearty and flavorful burritos filled with seasoned ground beef, beans, and cheese, then smothered in enchilada sauce and more cheese for a comforting, oven-baked meal.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) refried beans
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • 1 can (10 oz) red enchilada sauce
  • 1/4 cup chopped green onions (optional)
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Add taco seasoning and water to the beef. Simmer for 5 minutes until thickened.
  4. Stir in refried beans and cook until heated through.
  5. Warm the tortillas in the microwave or on a skillet until pliable.
  6. Spoon the beef and bean mixture onto each tortilla, top with some shredded cheese, and roll into burritos.
  7. Place burritos seam-side down in a baking dish.
  8. Pour enchilada sauce over the burritos and top with remaining cheese.
  9. Bake uncovered for 15-20 minutes or until cheese is melted and bubbly.
  10. Garnish with green onions and cilantro if desired. Serve hot.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • Add jalapeños or hot sauce for extra heat.
  • Serve with sour cream, guacamole, or salsa on the side.
