Hearty and flavorful burritos filled with seasoned ground beef, beans, and cheese, then smothered in enchilada sauce and more cheese for a comforting, oven-baked meal.

- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) refried beans
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 6 large flour tortillas
- 1 can (10 oz) red enchilada sauce
- 1/4 cup chopped green onions (optional)
- 1/4 cup chopped cilantro (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add taco seasoning and water to the beef. Simmer for 5 minutes until thickened.
- Stir in refried beans and cook until heated through.
- Warm the tortillas in the microwave or on a skillet until pliable.
- Spoon the beef and bean mixture onto each tortilla, top with some shredded cheese, and roll into burritos.
- Place burritos seam-side down in a baking dish.
- Pour enchilada sauce over the burritos and top with remaining cheese.
- Bake uncovered for 15-20 minutes or until cheese is melted and bubbly.
- Garnish with green onions and cilantro if desired. Serve hot.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Add jalapeños or hot sauce for extra heat.
- Serve with sour cream, guacamole, or salsa on the side.
