Description

Grilled Veggie French Onion Flatbreads are a delicious twist on classic French onion flavors, featuring caramelized onions, grilled vegetables, and melty cheese on crispy flatbreads.


Ingredients

  • 2 flatbreads
  • 2 large onions, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup crumbled goat cheese
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat grill or grill pan to medium heat.
  2. In a skillet, heat olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized, about 20 minutes. Stir in balsamic vinegar and season with salt and pepper.
  3. While onions cook, grill bell peppers and zucchini slices until tender and slightly charred, about 3-4 minutes per side.
  4. Place flatbreads on the grill for 1-2 minutes per side to lightly toast.
  5. Top each flatbread with caramelized onions, grilled vegetables, mozzarella cheese, goat cheese, and fresh thyme.
  6. Return flatbreads to the grill, close the lid, and cook for 3-5 minutes until cheese melts.
  7. Remove from grill, garnish with fresh basil, slice, and serve warm.

Notes

  • Use naan or pita bread if flatbreads aren’t available.
  • Swap goat cheese with feta or omit for a dairy-free version.
  • Customize veggies based on what’s in season.
