Grilled Veggie French Onion Flatbreads are a delicious twist on classic French onion flavors, featuring caramelized onions, grilled vegetables, and melty cheese on crispy flatbreads.

- 2 flatbreads
- 2 large onions, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1/2 cup shredded mozzarella cheese
- 1/4 cup crumbled goat cheese
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat grill or grill pan to medium heat.
- In a skillet, heat olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized, about 20 minutes. Stir in balsamic vinegar and season with salt and pepper.
- While onions cook, grill bell peppers and zucchini slices until tender and slightly charred, about 3-4 minutes per side.
- Place flatbreads on the grill for 1-2 minutes per side to lightly toast.
- Top each flatbread with caramelized onions, grilled vegetables, mozzarella cheese, goat cheese, and fresh thyme.
- Return flatbreads to the grill, close the lid, and cook for 3-5 minutes until cheese melts.
- Remove from grill, garnish with fresh basil, slice, and serve warm.
Notes
- Use naan or pita bread if flatbreads aren’t available.
- Swap goat cheese with feta or omit for a dairy-free version.
- Customize veggies based on what’s in season.
