- 1 lb flank or skirt steak
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 8 small corn tortillas
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- 1 avocado, sliced
- 1/2 cup crumbled cotija cheese
- 1 lime, cut into wedges
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix olive oil, garlic, cumin, chili powder, paprika, salt, and pepper.
- Rub the spice mixture all over the steak.
- Grill the steak for 4-6 minutes per side, or until desired doneness is reached.
- Remove steak from grill and let rest for 5 minutes before slicing thinly against the grain.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- Assemble tacos by placing sliced steak in tortillas and topping with onion, cilantro, avocado, cotija cheese, and a squeeze of lime.
- Serve immediately.
Notes
- Marinate steak for up to 2 hours for extra flavor.
- Use flour tortillas if preferred.
- Top with your favorite salsa or hot sauce for added heat.
