Description

A refreshing summer salad featuring sweet grilled peaches, creamy burrata, and a tangy balsamic glaze, perfect as a light appetizer or side dish.


Ingredients

  • 3 ripe peaches, halved and pitted
  • 1 tablespoon olive oil
  • 8 oz burrata cheese
  • 4 cups arugula or mixed greens
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste
  • 1/4 cup toasted pine nuts (optional)

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Brush peach halves with olive oil and place cut-side down on the grill.
  3. Grill peaches for 3–4 minutes until grill marks appear and they begin to soften. Remove and let cool slightly, then slice.
  4. Arrange arugula or mixed greens on a serving platter.
  5. Place grilled peach slices and torn burrata over the greens.
  6. Sprinkle with fresh basil and toasted pine nuts if using.
  7. Drizzle with balsamic glaze and season with salt and pepper.
  8. Serve immediately.

Notes

  • Use firm, ripe peaches for best grilling results.
  • For extra flavor, try adding a drizzle of honey or a pinch of chili flakes.
  • Substitute burrata with fresh mozzarella if desired.
