Description
A refreshing summer salad featuring sweet grilled peaches, creamy burrata, and a tangy balsamic glaze, perfect as a light appetizer or side dish.

- 3 ripe peaches, halved and pitted
- 1 tablespoon olive oil
- 8 oz burrata cheese
- 4 cups arugula or mixed greens
- 1/4 cup fresh basil leaves
- 2 tablespoons balsamic glaze
- Salt and pepper to taste
- 1/4 cup toasted pine nuts (optional)
Instructions
- Preheat grill or grill pan to medium-high heat.
- Brush peach halves with olive oil and place cut-side down on the grill.
- Grill peaches for 3–4 minutes until grill marks appear and they begin to soften. Remove and let cool slightly, then slice.
- Arrange arugula or mixed greens on a serving platter.
- Place grilled peach slices and torn burrata over the greens.
- Sprinkle with fresh basil and toasted pine nuts if using.
- Drizzle with balsamic glaze and season with salt and pepper.
- Serve immediately.
Notes
- Use firm, ripe peaches for best grilling results.
- For extra flavor, try adding a drizzle of honey or a pinch of chili flakes.
- Substitute burrata with fresh mozzarella if desired.
