A healthy and flavorful grilled paneer salad made with marinated paneer cubes, fresh vegetables, and a tangy dressing. Perfect as a light lunch or a nutritious side dish.

- 200g paneer, cut into cubes
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1/2 tsp chili powder
- 1/2 tsp cumin powder
- Salt to taste
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 yellow bell pepper, sliced
- 1 cup mixed greens or lettuce
- 2 tbsp chopped fresh coriander or mint
- 1 tbsp balsamic vinegar or lemon juice (for dressing)
- 1 tsp honey or maple syrup (optional)
- Black pepper to taste
Instructions
- In a bowl, mix olive oil, lemon juice, chili powder, cumin powder, and salt to create a marinade.
- Add the paneer cubes to the marinade and let it sit for 15-20 minutes.
- Preheat a grill pan or skillet and grill the marinated paneer cubes until golden and slightly charred on all sides. Set aside.
- In a large salad bowl, combine cherry tomatoes, cucumber, red onion, bell pepper, and mixed greens.
- Add the grilled paneer cubes on top of the vegetables.
- In a small bowl, mix balsamic vinegar or lemon juice with honey or maple syrup, and black pepper to make the dressing.
- Drizzle the dressing over the salad and toss gently.
- Garnish with chopped fresh coriander or mint and serve immediately.
Notes
- You can add other vegetables like carrots or radishes for more crunch.
- Paneer can be replaced with tofu for a vegan version.
- Serve chilled or at room temperature.
