Description

A healthy and flavorful grilled paneer salad made with marinated paneer cubes, fresh vegetables, and a tangy dressing. Perfect as a light lunch or a nutritious side dish.


Ingredients

  • 200g paneer, cut into cubes
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/2 tsp chili powder
  • 1/2 tsp cumin powder
  • Salt to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 yellow bell pepper, sliced
  • 1 cup mixed greens or lettuce
  • 2 tbsp chopped fresh coriander or mint
  • 1 tbsp balsamic vinegar or lemon juice (for dressing)
  • 1 tsp honey or maple syrup (optional)
  • Black pepper to taste

Instructions

  1. In a bowl, mix olive oil, lemon juice, chili powder, cumin powder, and salt to create a marinade.
  2. Add the paneer cubes to the marinade and let it sit for 15-20 minutes.
  3. Preheat a grill pan or skillet and grill the marinated paneer cubes until golden and slightly charred on all sides. Set aside.
  4. In a large salad bowl, combine cherry tomatoes, cucumber, red onion, bell pepper, and mixed greens.
  5. Add the grilled paneer cubes on top of the vegetables.
  6. In a small bowl, mix balsamic vinegar or lemon juice with honey or maple syrup, and black pepper to make the dressing.
  7. Drizzle the dressing over the salad and toss gently.
  8. Garnish with chopped fresh coriander or mint and serve immediately.

Notes

  • You can add other vegetables like carrots or radishes for more crunch.
  • Paneer can be replaced with tofu for a vegan version.
  • Serve chilled or at room temperature.
