- 4 boneless, skinless chicken breasts
- 1/2 cup soy sauce
- 1/4 cup pineapple juice
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 4 pineapple rings
- 4 slices provolone or mozzarella cheese
- 4 hamburger buns
- 1 tbsp olive oil
- 1/4 cup mayonnaise (optional)
- Lettuce leaves (optional)
- Red onion slices (optional)
Instructions
- In a bowl, mix soy sauce, pineapple juice, brown sugar, garlic, and ginger to make the marinade.
- Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Marinate in the refrigerator for at least 1 hour, preferably 3-4 hours.
- Preheat grill to medium-high heat and lightly oil the grates.
- Remove chicken from marinade and grill for 5-7 minutes per side, or until fully cooked.
- During the last few minutes of grilling, place pineapple rings on the grill and cook until charred, about 2-3 minutes per side.
- Add cheese slices to the chicken breasts on the grill during the last minute to melt.
- Toast buns on the grill if desired.
- Assemble sandwiches by spreading mayonnaise on buns, then layering lettuce, grilled chicken with cheese, grilled pineapple, and onion slices.
- Serve hot and enjoy!
Notes
- Use fresh pineapple for extra flavor, though canned rings work well too.
- Marinate the chicken overnight for deeper flavor.
- Add jalapeños or a spicy sauce for a kick.
