Grilled Chicken Kafta is a flavorful Middle Eastern dish made with ground chicken, herbs, and spices, shaped onto skewers and grilled to perfection. It’s a healthier take on the traditional lamb or beef kafta.

- 1 lb ground chicken
- 1 small onion, grated
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp paprika
- 1/2 tsp ground black pepper
- 1 tsp salt
- 1 tbsp olive oil (for brushing)
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine ground chicken, grated onion, minced garlic, parsley, cilantro, and all spices. Mix until well combined.
- Divide the mixture into 6-8 portions and shape each around a skewer into long, oval-shaped patties.
- Brush each kafta lightly with olive oil to prevent sticking.
- Grill the kaftas for 4-5 minutes on each side or until fully cooked and nicely charred.
- Remove from the grill and let rest for a couple of minutes before serving.
Notes
- If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
- Can be served with pita, rice, or salad for a complete meal.
- Adjust spices to your taste preference.
