Description

Grilled Chicken Kafta is a flavorful Middle Eastern dish made with ground chicken, herbs, and spices, shaped onto skewers and grilled to perfection. It’s a healthier take on the traditional lamb or beef kafta.


Ingredients

  • 1 lb ground chicken
  • 1 small onion, grated
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp paprika
  • 1/2 tsp ground black pepper
  • 1 tsp salt
  • 1 tbsp olive oil (for brushing)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine ground chicken, grated onion, minced garlic, parsley, cilantro, and all spices. Mix until well combined.
  3. Divide the mixture into 6-8 portions and shape each around a skewer into long, oval-shaped patties.
  4. Brush each kafta lightly with olive oil to prevent sticking.
  5. Grill the kaftas for 4-5 minutes on each side or until fully cooked and nicely charred.
  6. Remove from the grill and let rest for a couple of minutes before serving.

Notes

  • If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
  • Can be served with pita, rice, or salad for a complete meal.
  • Adjust spices to your taste preference.
