For the Green Goddess Hummus:
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1/2 cup fresh parsley leaves
- 1/4 cup fresh basil leaves
- 2 tablespoons fresh chives
- 1 garlic clove
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 2–3 tablespoons water
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- optional: 1 avocado for extra creaminess
Instructions
- In a food processor, combine chickpeas, parsley, basil, chives, garlic, tahini, lemon juice, olive oil, salt, and pepper.
- Transfer to a serving bowl and drizzle with olive oil or garnish with extra herbs if desired.
Blend until smooth, scraping down the sides as needed. Add water 1 tablespoon at a time to reach desired consistency. If using avocado, add it in and blend again until creamy. Taste and adjust seasoning as needed.
Notes
- Serve with pita chips, fresh veggies, or spread on sandwiches.
- Store in an airtight container in the refrigerator for up to 5 days.
