For the Green Goddess Hummus:

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/2 cup fresh parsley leaves
  • 1/4 cup fresh basil leaves
  • 2 tablespoons fresh chives
  • 1 garlic clove
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 23 tablespoons water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • optional: 1 avocado for extra creaminess

Instructions

  1. In a food processor, combine chickpeas, parsley, basil, chives, garlic, tahini, lemon juice, olive oil, salt, and pepper.
  2. Blend until smooth, scraping down the sides as needed. Add water 1 tablespoon at a time to reach desired consistency. If using avocado, add it in and blend again until creamy. Taste and adjust seasoning as needed.

  3. Transfer to a serving bowl and drizzle with olive oil or garnish with extra herbs if desired.

Notes

  • Serve with pita chips, fresh veggies, or spread on sandwiches.
  • Store in an airtight container in the refrigerator for up to 5 days.
