Description
A gourmet twist on the classic grilled cheese, featuring creamy goat cheese, sweet honey, and a hint of spice, all melted between two crispy, buttery slices of bread.

- 4 slices of sourdough or artisan bread
- 4 oz goat cheese, softened
- 2 tbsp honey
- 1/2 tsp red pepper flakes (adjust to taste)
- 2 tbsp butter, softened
- Optional: pinch of sea salt
Instructions
- Spread butter on one side of each bread slice.
- On the unbuttered side of two slices, spread goat cheese evenly.
- Drizzle honey over the goat cheese and sprinkle with red pepper flakes.
- Top with the remaining slices of bread, buttered side out.
- Heat a skillet over medium heat. Place sandwiches in skillet and cook until golden brown on one side, about 3-4 minutes.
- Flip and cook the other side until golden and cheese is warm and melty, another 3-4 minutes.
- Remove from skillet, let cool slightly, then slice and serve warm.
Notes
- For extra flavor, add a few arugula leaves before grilling.
- Try adding a sprinkle of cracked black pepper for an additional kick.
- Use a panini press for an evenly crisped sandwich.
