Description

Garlic Butter Roasted Mushrooms are a flavorful and easy-to-make side dish featuring whole cremini or white mushrooms roasted to golden perfection with a buttery garlic herb sauce. This recipe combines melted butter, olive oil, fresh garlic, parsley, and thyme to enhance the natural umami of the mushrooms, resulting in tender, slightly crisp bites that can be served as an appetizer, side, or added to your favorite pasta or grain bowls.

Ingredients

Scale

Main Ingredients

  • 1 pound whole cremini or white mushrooms (cleaned and trimmed)
  • 3 tablespoons unsalted butter (melted)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 tablespoon chopped fresh parsley (plus more for garnish)
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon grated Parmesan cheese (optional)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Toss Mushrooms with Seasonings: In a large mixing bowl, combine the cleaned and trimmed mushrooms with melted butter, olive oil, minced garlic, chopped parsley, thyme, salt, and black pepper. Toss well until all mushrooms are evenly coated with the flavorful mixture.
  3. Arrange Mushrooms for Roasting: Spread the seasoned mushrooms out in a single layer on the prepared baking sheet, placing them cap-side down to help them cook evenly and develop a nice roasted surface.
  4. Roast Mushrooms: Place the baking sheet in the preheated oven and roast the mushrooms for 20 to 25 minutes. Stir the mushrooms once halfway through the roasting process to ensure even cooking. They should become golden, tender, and slightly crisp around the edges when done.
  5. Finish and Serve: Remove the mushrooms from the oven and, if desired, sprinkle grated Parmesan cheese over the top while still warm. Garnish with additional fresh parsley and serve immediately as a delicious warm side dish or appetizer.

Notes

  • This dish makes an excellent side or appetizer and can also be added to pasta, rice, or grain bowls for extra flavor.
  • For an added depth of flavor, drizzle a splash of balsamic vinegar over the mushrooms before roasting.
