Instructions
- Prepare the Pan: Line an 8×8-inch baking pan with parchment paper, ensuring there’s an overhang on the sides to easily lift out the bars later.
- Mix Ingredients: In a medium bowl, combine the Greek yogurt, creamy peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt. Stir until the mixture is smooth and fully integrated.
- Add Chocolate Chips and Crunch: Gently fold in the mini chocolate chips and, if desired, the crushed graham crackers or granola to add texture.
- Spread the Mixture: Evenly spread the yogurt mixture into the prepared pan and smooth the top with a spatula for an even layer.
- Freeze: Place the pan in the freezer and let it freeze for at least 3 hours or until the bars are completely firm.
- Slice and Store: Once frozen, lift the mixture out of the pan using the parchment paper overhang. Cut into 12 bars or squares. Store the bars in an airtight container in the freezer, placing parchment paper between layers to prevent sticking.
- Serve: For easier biting, let bars sit at room temperature for 2–3 minutes before eating.
