Instructions

  1. Prepare the Pan: Line an 8×8-inch baking pan with parchment paper, ensuring there’s an overhang on the sides to easily lift out the bars later.
  2. Mix Ingredients: In a medium bowl, combine the Greek yogurt, creamy peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt. Stir until the mixture is smooth and fully integrated.
  3. Add Chocolate Chips and Crunch: Gently fold in the mini chocolate chips and, if desired, the crushed graham crackers or granola to add texture.
  4. Spread the Mixture: Evenly spread the yogurt mixture into the prepared pan and smooth the top with a spatula for an even layer.
  5. Freeze: Place the pan in the freezer and let it freeze for at least 3 hours or until the bars are completely firm.
