Ingredients
Scale
Main Ingredients
- 2 cups cold mashed potatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked bacon bits (optional)
- 2 tablespoons chopped green onions or chives
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 large egg (beaten)
- 3/4 cup breadcrumbs (plus more for coating)
- 1/4 cup all-purpose flour
- Oil for frying
Instructions
- Mix Ingredients: In a large bowl, combine cold mashed potatoes, shredded cheddar cheese, optional bacon bits, chopped green onions, garlic powder, salt, and pepper. Stir in the beaten egg and 3/4 cup of breadcrumbs until the mixture holds together firmly.
- Form Balls and Chill: Scoop out tablespoon-sized portions of the mixture and roll them into balls. Place the balls in the fridge and chill for 15–20 minutes to help them firm up and maintain their shape during frying.
- Coat the Balls: Lightly roll each chilled potato ball in all-purpose flour, then coat thoroughly with additional breadcrumbs to ensure a crispy outer crust after frying.
- Heat Oil: Heat oil in a deep skillet or saucepan to 350°F (175°C), ensuring the oil is hot enough to create a crispy exterior without absorbing excess oil.
- Fry Potato Balls: Fry the mashed potato balls in batches, being careful not to overcrowd the pan, for 2–3 minutes or until they turn a beautiful golden brown and crispy on all sides.
- Drain and Serve: Remove the fried potato balls with a slotted spoon and transfer them to a paper towel-lined plate to drain off any excess oil. Serve hot with sour cream, ranch dressing, or your favorite dipping sauce for a delicious appetizer or snack.
Notes
- Use cold leftover mashed potatoes for the best texture.
- Customize by adding herbs, jalapeños, or swapping different cheeses to vary flavor.
- For a lighter version, bake at 400°F (200°C) for 20 minutes instead of frying.
