- 2 flour tortillas
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 avocado, sliced

- 1 tbsp butter (for frying the tortillas and eggs)
Instructions
- Prepare the skillet: Heat a non-stick skillet over medium heat and add a small amount of butter to prevent sticking.
- Fry the eggs: Crack one egg into the skillet, season with salt and pepper, and cook until the egg white is set but the yolk remains runny. Carefully remove and set aside. Repeat for the second egg.
- Assemble quesadilla base: In the same skillet, place one tortilla and evenly sprinkle half of the shredded cheese over it.
- Add eggs and avocado: Place the fried eggs on top of the cheese, then layer the avocado slices evenly over the eggs.
- Top with cheese and second tortilla: Sprinkle the remaining shredded cheese over the avocado, then cover with the second tortilla.
- Cook the quesadilla: Cook for 2 to 3 minutes on each side, until the tortillas turn golden brown and the cheese inside melts thoroughly.
- Serve: Remove the quesadilla from the skillet, cut into wedges, and serve hot immediately.
