Description

A light and refreshing fresh pea soup made with sweet peas, aromatics, and a touch of cream, perfect for spring or summer meals.


Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh or frozen green peas
  • 3 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream (optional)
  • 2 tablespoons fresh mint leaves (optional)

Instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add chopped onion and cook until softened, about 5 minutes.
  3. Stir in garlic and cook for another minute.
  4. Add peas and vegetable broth, bring to a boil.
  5. Reduce heat and simmer for 10 minutes, until peas are tender.
  6. Remove from heat and let cool slightly.
  7. Blend the soup in batches until smooth, using a blender or immersion blender.
  8. Return the soup to the pot and season with salt and pepper.
  9. Stir in heavy cream if using, and heat through without boiling.
  10. Garnish with fresh mint if desired and serve warm or chilled.

Notes

  • For a vegan version, omit the cream or use a plant-based alternative.
  • Fresh mint adds a refreshing flavor but can be skipped if preferred.
  • Serve with crusty bread or a light salad for a complete meal.
