- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 cup imitation crab meat, shredded
- 1 avocado, diced
- 1 cucumber, diced
- 2 tablespoons mayonnaise
- 1 tablespoon sriracha (optional)
- 2 sheets nori, cut into strips
- 1 tablespoon sesame seeds
- 2 green onions, sliced
- Pickled ginger, for serving
- Soy sauce, for serving
Instructions
- Rinse sushi rice under cold water until the water runs clear.
- Cook the rice with water in a rice cooker or on the stovetop according to package instructions.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then gently fold into the cooked rice.
- In another bowl, mix shredded crab meat with mayonnaise and sriracha if using.
- Prepare avocado and cucumber by dicing them into bite-sized pieces.
- Assemble bowls by layering seasoned rice, crab mixture, avocado, cucumber, nori strips, sesame seeds, and green onions.
- Serve with pickled ginger and soy sauce on the side.

- Use real crab meat for a more authentic taste if preferred.
- Add other toppings like edamame, carrots, or radish for variety.
- Adjust sriracha to your desired spice level.
