Description

A refreshing and healthy salad made with black beans, sweet corn, fresh vegetables, and a zesty lime dressing. Perfect as a side dish or a light main course.


Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 1/2 cups corn kernels (fresh, canned, or thawed frozen)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the black beans, corn, red bell pepper, red onion, avocado, and cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Refrigerate for at least 15 minutes to allow flavors to meld.
  5. Serve chilled or at room temperature.

Notes

  • For extra heat, add a chopped jalapeƱo or a pinch of chili flakes.
  • This salad can be made a few hours in advance but add the avocado just before serving to prevent browning.
