Description
A classic French Onion Soup made with caramelized onions, beef broth, and topped with toasted bread and melted cheese.

- 4 large yellow onions, thinly sliced
- 4 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tsp sugar
- 1/2 tsp salt
- 2 cloves garlic, minced
- 8 cups beef broth
- 1/2 cup dry white wine (optional)
- 1 bay leaf
- 1/4 tsp dried thyme
- Salt and pepper, to taste
- 1 baguette, sliced
- 2 cups grated Gruyère cheese
Instructions
- In a large pot, melt the butter with olive oil over medium heat.
- Add sliced onions, sugar, and salt. Cook, stirring often, until onions are deeply caramelized, about 30-40 minutes.
- Add minced garlic and cook for another minute.
- Stir in beef broth, wine (if using), bay leaf, and thyme. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Remove bay leaf and season with salt and pepper to taste.
- Preheat the broiler. Place baguette slices on a baking sheet and toast until golden.
- Ladle soup into oven-safe bowls, place a toasted baguette slice on top of each, and sprinkle generously with Gruyère cheese.
- Broil until the cheese is melted and bubbly, about 2-3 minutes.
- Serve hot and enjoy.
Notes
- Use yellow or sweet onions for best flavor.
- Vegetarian version can use vegetable broth instead of beef broth.
- Gruyère can be substituted with Swiss or Mozzarella cheese.
