Description

Forgotten Chicken is a simple and comforting casserole dish made with chicken breasts, rice, and a creamy soup mixture. It’s called ‘forgotten’ because it cooks slowly in the oven, giving you time to forget about it until it’s perfectly done.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long grain white rice (uncooked)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 1/2 cups water
  • 1 packet dry onion soup mix
  • Salt and pepper to taste
  • Non-stick cooking spray or butter for greasing

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with non-stick spray or butter.
  3. Spread the uncooked rice evenly in the bottom of the baking dish.
  4. In a bowl, mix the cream of chicken soup, cream of mushroom soup, and water until well combined. Pour over the rice.
  5. Place the chicken breasts on top of the soup and rice mixture. Season with salt and pepper.
  6. Sprinkle the dry onion soup mix evenly over the chicken.
  7. Cover the dish tightly with aluminum foil.
  8. Bake for 1 hour and 45 minutes or until the rice is tender and the chicken is fully cooked.
  9. Let rest for 5 minutes before serving.

Notes

  • You can substitute brown rice, but increase the baking time and liquid slightly.
  • Try adding vegetables like mushrooms or green beans for extra flavor and nutrition.
  • This dish can be assembled ahead and refrigerated before baking.
