- 4 boneless, skinless chicken breasts
- 1 cup long grain white rice (uncooked)
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 1/2 cups water
- 1 packet dry onion soup mix
- Salt and pepper to taste
- Non-stick cooking spray or butter for greasing
Instructions
- Preheat oven to 350°F (175°C).
- Grease a 9×13-inch baking dish with non-stick spray or butter.
- Spread the uncooked rice evenly in the bottom of the baking dish.
- In a bowl, mix the cream of chicken soup, cream of mushroom soup, and water until well combined. Pour over the rice.
- Place the chicken breasts on top of the soup and rice mixture. Season with salt and pepper.
- Sprinkle the dry onion soup mix evenly over the chicken.
- Cover the dish tightly with aluminum foil.
- Bake for 1 hour and 45 minutes or until the rice is tender and the chicken is fully cooked.
- Let rest for 5 minutes before serving.
Notes
- You can substitute brown rice, but increase the baking time and liquid slightly.
- Try adding vegetables like mushrooms or green beans for extra flavor and nutrition.
- This dish can be assembled ahead and refrigerated before baking.
