Description

These fluffy pancakes are a classic breakfast favorite, featuring a light and airy texture made from a simple batter of all-purpose flour, milk, eggs, and melted butter. Perfectly cooked on a griddle, they turn golden brown with a tender crumb, ideal for drizzling with maple syrup and serving with fresh berries for a delicious start to your day.

Ingredients

Scale

Dry Ingredients

  • 1½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 3 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients

  • 1 cup whole milk
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter (3 tablespoons melted for batter, 1 tablespoon melted for griddle)

To Serve

  • Pats of butter
  • Pure maple syrup
  • Fresh berries (strawberries and blueberries)

Instructions

  1. Preheat griddle: Preheat a large electric griddle over medium heat to 350°F while preparing the batter.
  2. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Create a slight well in the center.
  3. Combine wet ingredients: In a small bowl, whisk together the milk, egg, vanilla extract, and 3 tablespoons melted butter until fully combined.
  4. Make batter: Pour wet ingredients into dry well; stir gently just until no large dry pockets remain. Leave some lumps to keep batter light.
  5. Butter the griddle: Lightly coat the preheated griddle with remaining 1 tablespoon melted butter using a pastry brush.
  6. Cook pancakes: Using a ¼ cup scoop, place batter onto griddle about 1½ inches apart, fitting 8-10 pancakes. Cook 3-4 minutes until bubbles form around edges and center, then flip and cook 2-3 minutes more.
  7. Repeat: Continue cooking any remaining batter in batches following the same method.
  8. Serve: Stack 2-3 pancakes per plate; top with a pat of butter, drizzle with maple syrup, and serve with fresh berries if desired.

Notes

  • Do not overmix pancake batter; lumps are normal and help keep pancakes fluffy.
  • Use a medium cookie scoop or ¼ cup measuring cup for evenly sized pancakes.
  • Ensure griddle is properly preheated to 350°F for even cooking.
  • Butter the griddle lightly to prevent sticking and add flavor.
  • Serve immediately for best texture and flavor.
