Instructions

  1. Prepare the baking dish. Grease a 9×13-inch baking dish thoroughly with butter or cooking spray to prevent the treats from sticking, then set it aside while you prepare the mixture.
  2. Melt the butter and marshmallows. In a large saucepan over medium heat, melt the 1/4 cup unsalted butter. Add the whole 10-ounce bag of mini marshmallows and stir continuously until they are melted completely and the mixture is smooth.
  3. Add peanut butter and vanilla. Stir in the 1/2 cup creamy peanut butter until fully blended with the melted marshmallows, creating a rich, creamy mixture. Remove the saucepan from heat, then stir in 1 teaspoon vanilla extract for added flavor.
  4. Combine with cereal. Quickly pour the peanut butter marshmallow mixture over the 6 cups of crispy rice cereal in a large mixing bowl. Stir gently but thoroughly until every piece of cereal is evenly coated with the mixture.
  5. Transfer to baking dish. Using a spatula or piece of wax paper lightly greased with butter, press the cereal mixture firmly and evenly into the prepared 9×13-inch baking dish, smoothing the top for an even surface.
  6. Add optional mini marshmallows. If desired, sprinkle 1/2 cup mini marshmallows evenly over the top and gently press them into the surface of the treats to help them adhere.
