Instructions
- Prepare the baking dish. Grease a 9×13-inch baking dish thoroughly with butter or cooking spray to prevent the treats from sticking, then set it aside while you prepare the mixture.
- Melt the butter and marshmallows. In a large saucepan over medium heat, melt the 1/4 cup unsalted butter. Add the whole 10-ounce bag of mini marshmallows and stir continuously until they are melted completely and the mixture is smooth.
- Add peanut butter and vanilla. Stir in the 1/2 cup creamy peanut butter until fully blended with the melted marshmallows, creating a rich, creamy mixture. Remove the saucepan from heat, then stir in 1 teaspoon vanilla extract for added flavor.
- Combine with cereal. Quickly pour the peanut butter marshmallow mixture over the 6 cups of crispy rice cereal in a large mixing bowl. Stir gently but thoroughly until every piece of cereal is evenly coated with the mixture.
- Transfer to baking dish. Using a spatula or piece of wax paper lightly greased with butter, press the cereal mixture firmly and evenly into the prepared 9×13-inch baking dish, smoothing the top for an even surface.
- Add optional mini marshmallows. If desired, sprinkle 1/2 cup mini marshmallows evenly over the top and gently press them into the surface of the treats to help them adhere.
- Drizzle with peanut butter. Warm an additional 1/4 cup peanut butter until slightly melted and drizzle it over the top of the treats to add extra flavor and a decorative finish.
- Allow to set. Let the treats cool at room temperature for about 30 minutes or until they have firmed up enough to cut cleanly.
- Slice and serve. Cut the treats into squares and serve immediately or store in an airtight container for later enjoyment.
