These finger-licking veggie fajitas are packed with colorful bell peppers, onions, and a flavorful blend of spices, perfect for a quick and healthy weeknight dinner.


Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large red onion, sliced
  • 1 zucchini, sliced
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Juice of 1 lime
  • 8 small flour or corn tortillas
  • Optional toppings: sour cream, guacamole, salsa, shredded cheese, fresh cilantro

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced bell peppers, onion, zucchini, and mushrooms. Sauté for 6-8 minutes until vegetables are tender-crisp.
  3. Add minced garlic, chili powder, paprika, cumin, oregano, salt, and pepper. Cook for another 2-3 minutes until fragrant.
  4. Squeeze fresh lime juice over the vegetables and stir to combine.
  5. Warm tortillas in a dry skillet or microwave.
  6. Fill each tortilla with the sautéed veggies and top with your choice of optional toppings.
  7. Serve immediately and enjoy.
