Description

A classic European Apple Cake that combines tender spiced apples with a moist, fluffy batter. This cozy fall dessert features thinly sliced apples both inside and arranged beautifully on top, baked to perfection with warm cinnamon and nutmeg flavors. Perfect for serving with a dusting of powdered sugar, this easy-to-make cake is ideal for family gatherings or a special occasion.

Ingredients

Scale

Apples

  • 1 1/2 pounds apples (about 3–4 medium, peeled, cored, and thinly sliced)
  • 1 tablespoon lemon juice

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Wet Ingredients

  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk

Optional

  • 2 tablespoons powdered sugar (for dusting)

Instructions

  1. Prepare the Pan: Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan or line it with parchment paper for easy removal.
  2. Toss Apples: In a large bowl, combine the thinly sliced apples with lemon juice to prevent browning and enhance flavor. Set aside.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, salt, ground cinnamon, and ground nutmeg until evenly combined.
  4. Cream Butter and Sugar: In a large mixing bowl, beat the softened unsalted butter with granulated sugar until the mixture is light and fluffy, which takes about 3-4 minutes.
  5. Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next, then mix in the vanilla extract.
  6. Combine Batter: Gradually add the flour mixture into the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix just until combined to avoid overmixing.
  7. Fold in Apples: Gently fold half of the sliced apples into the batter to distribute the fruit evenly.
  8. Assemble Cake: Pour the batter into the prepared 9-inch pan and spread it evenly. Arrange the remaining apple slices on top in a circular decorative pattern for an attractive finish.
  9. Bake: Place the pan in the preheated oven and bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool and Serve: Allow the cake to cool in the pan for 15 minutes, then remove the springform sides and cool completely on a wire rack. Dust with powdered sugar before serving if desired.

Notes

  • Use tart apples such as Granny Smith or a combination of sweet and tart apples for a well-rounded flavor.
  • The cake is best enjoyed within 2 days when kept at room temperature.
  • For longer freshness, store the cake in the refrigerator.
