- 4 ears of corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup cotija cheese, crumbled
- 1 clove garlic, minced
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika (optional)
- 1 tablespoon lime juice
- 2 tablespoons chopped cilantro (optional)
- 1 lime, cut into wedges (for serving)
- Salt to taste
Instructions
- Preheat grill to medium-high heat.
- Grill the corn for 7-10 minutes, turning occasionally, until charred and cooked through.
- In a bowl, mix mayonnaise, sour cream, garlic, lime juice, and a pinch of salt.
- Brush the creamy mixture all over the grilled corn while it is still hot.
- Sprinkle generously with cotija cheese, chili powder, and smoked paprika if using.
- Garnish with chopped cilantro and serve with lime wedges on the side.
Notes
- Use Mexican crema instead of sour cream for a more authentic flavor.
- Elote can also be made with frozen corn off the cob, served in a cup as esquites.
- Adjust chili powder to taste for spice preference.
