Description

Elote, also known as Mexican street corn, is a delicious and flavorful grilled corn on the cob slathered with a creamy, tangy, and cheesy topping.


Ingredients

  • 4 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 clove garlic, minced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika (optional)
  • 1 tablespoon lime juice
  • 2 tablespoons chopped cilantro (optional)
  • 1 lime, cut into wedges (for serving)
  • Salt to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Grill the corn for 7-10 minutes, turning occasionally, until charred and cooked through.
  3. In a bowl, mix mayonnaise, sour cream, garlic, lime juice, and a pinch of salt.
  4. Brush the creamy mixture all over the grilled corn while it is still hot.
  5. Sprinkle generously with cotija cheese, chili powder, and smoked paprika if using.
  6. Garnish with chopped cilantro and serve with lime wedges on the side.

Notes

  • Use Mexican crema instead of sour cream for a more authentic flavor.
  • Elote can also be made with frozen corn off the cob, served in a cup as esquites.
  • Adjust chili powder to taste for spice preference.
