Description
Elote, or Mexican Street Corn, is a popular Mexican snack made with grilled corn on the cob slathered in a creamy, tangy sauce and topped with cheese and chili powder.

- 4 ears of corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup cotija cheese, crumbled
- 1 clove garlic, minced
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/4 cup fresh cilantro, chopped (optional)
- 1/2 teaspoon salt
- 1 lime, cut into wedges for serving
Instructions
- Preheat a grill to medium-high heat.
- Grill the corn, turning occasionally, until slightly charred on all sides, about 7-10 minutes.
- In a small bowl, mix mayonnaise, sour cream, garlic, lime juice, and salt.
- Brush the creamy mixture generously over each ear of grilled corn.
- Sprinkle with cotija cheese and chili powder.
- Garnish with chopped cilantro, if using.
- Serve immediately with lime wedges on the side.
Notes
- You can substitute cotija with feta cheese if unavailable.
- Adjust chili powder to taste based on spice preference.
- Elote is best served hot off the grill.
