Instructions

  1. Prepare Matcha Paste: Set aside 1 tablespoon of heavy cream and mix it with 1 tablespoon of sifted matcha powder until smooth to create a vibrant matcha paste that will flavor the mascarpone layer.
  2. Mix Mascarpone and Sugar: In a large bowl, combine the mascarpone cheese, sugar, and the prepared matcha paste. Stir until the sugar dissolves completely and the mixture is smooth and homogenous.
  3. Whip the Cream: In a separate bowl, whip the remaining heavy cream until medium stiff peaks form. Carefully fold this whipped cream into the mascarpone mixture to maintain a light and airy texture.
  4. Prepare Matcha Dipping Liquid: Using a matcha whisk, vigorously whisk together 12 grams of matcha powder, 2 tablespoons sugar, and 500 ml hot water until frothy. Allow this mixture to cool completely before use; this will soak the ladyfingers imparting them with liquor-like flavor.
