Description

Eclair Cake is a no-bake layered dessert featuring graham crackers, creamy vanilla pudding, whipped topping, and a rich chocolate glaze. This easy-to-make treat is chilled to soften the crackers and meld the flavors, creating a luscious and indulgent dessert perfect for any occasion.

Ingredients

Scale

Base and Filling

  • 1 (14.4-ounce) box graham crackers
  • 2 (3.4-ounce) boxes instant vanilla pudding mix
  • 2 1/2 cups cold whole milk
  • 1 (8-ounce) tub whipped topping, thawed

Chocolate Glaze

  • 1/2 cup semisweet chocolate chips
  • 1/4 cup heavy cream
  • 2 tablespoons light corn syrup
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the pudding filling: In a large bowl, whisk together the instant vanilla pudding mix and cold whole milk until the mixture is smooth and thick, about 2 minutes. Gently fold in the thawed whipped topping until fully combined to create a creamy filling.
  2. Assemble the layers: In a 9×13-inch baking dish, lay a single layer of graham crackers to cover the bottom evenly. Spread half of the pudding mixture over the crackers. Add another graham cracker layer on top followed by the remaining pudding mixture. Finish with a final layer of graham crackers.
  3. Make the chocolate glaze: Combine semisweet chocolate chips, heavy cream, light corn syrup, and unsalted butter in a small saucepan over medium-low heat. Stir constantly until the mixture is smooth and melted. Remove from heat and stir in vanilla extract. Allow the glaze to cool for 5 to 10 minutes.
  4. Top with glaze and chill: Pour the cooled chocolate glaze evenly over the top layer of graham crackers, spreading it to the edges. Cover the cake with plastic wrap and refrigerate for at least 6 hours or overnight so the graham crackers soften and the flavors meld.
  5. Serve: Slice the cake into 12 servings and enjoy chilled for the best texture and flavor.

Notes

  • For a shortcut, use store-bought chocolate frosting instead of making the glaze.
  • Add a layer of sliced bananas or strawberries between the pudding and graham crackers for a fruity twist.
