Description
An easy and hearty tater tot casserole made with ground beef, vegetables, creamy soup, and topped with crispy tater tots. Perfect for a family-friendly dinner.

- 1 lb ground beef
- 1 small onion, diced
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup milk
- 1 can (15 oz) mixed vegetables, drained
- 2 cups shredded cheddar cheese
- 1 package (32 oz) frozen tater tots
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned. Drain excess fat.
- Stir in cream of mushroom soup, milk, mixed vegetables, and half of the shredded cheese. Season with salt and pepper.
- Transfer the beef mixture to a greased 9×13 inch baking dish and spread evenly.
- Arrange tater tots in a single layer on top of the mixture.
- Bake in the preheated oven for 35-40 minutes, until the tater tots are golden brown and crispy.
- Sprinkle remaining cheese on top and return to oven for 5 minutes, or until cheese is melted.
- Remove from oven and let sit for 5 minutes before serving.
Notes
- Use ground turkey or chicken for a lighter version.
- Add extra veggies like peas, corn, or green beans if desired.
- This casserole can be assembled ahead of time and baked later.
