Description

An easy and hearty tater tot casserole made with ground beef, vegetables, creamy soup, and topped with crispy tater tots. Perfect for a family-friendly dinner.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 can (15 oz) mixed vegetables, drained
  • 2 cups shredded cheddar cheese
  • 1 package (32 oz) frozen tater tots
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned. Drain excess fat.
  3. Stir in cream of mushroom soup, milk, mixed vegetables, and half of the shredded cheese. Season with salt and pepper.
  4. Transfer the beef mixture to a greased 9×13 inch baking dish and spread evenly.
  5. Arrange tater tots in a single layer on top of the mixture.
  6. Bake in the preheated oven for 35-40 minutes, until the tater tots are golden brown and crispy.
  7. Sprinkle remaining cheese on top and return to oven for 5 minutes, or until cheese is melted.
  8. Remove from oven and let sit for 5 minutes before serving.

Notes

  • Use ground turkey or chicken for a lighter version.
  • Add extra veggies like peas, corn, or green beans if desired.
  • This casserole can be assembled ahead of time and baked later.
