Description

A hearty and flavorful one-pot meal, Easy Taco Soup is packed with ground beef, beans, corn, and zesty taco seasoning. Perfect for a quick weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 (1 oz) packet taco seasoning
  • 1 (1 oz) packet ranch dressing mix
  • 2 cups beef broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, tortilla chips

Instructions

  1. In a large pot, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain excess fat.
  2. Add the black beans, kidney beans, corn, diced tomatoes, and tomato sauce to the pot.
  3. Stir in the taco seasoning and ranch dressing mix.
  4. Pour in the beef broth and bring the soup to a boil.
  5. Reduce heat and simmer for 20–25 minutes to blend flavors.
  6. Season with salt and pepper to taste.
  7. Serve hot with desired toppings.
