  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper (optional for extra heat)
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1/4 cup sour cream (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onion and cook for 3-4 minutes until softened.
  2. Add garlic and cook for another 30 seconds.
  3. Stir in the shredded chicken, chili powder, paprika, cumin, cayenne pepper, salt, and pepper. Cook for 2-3 minutes until heated through.
  4. Add the cooked rice, black beans, corn, and salsa. Stir until well combined and heated evenly.
  5. Warm the flour tortillas in the microwave or on a skillet.
  6. Spoon the chicken mixture into the center of each tortilla. Top with shredded cheese and sour cream if using.
  7. Roll up the burritos tightly, folding in the sides as you go.
  8. Serve warm, garnished with fresh cilantro if desired.

  • For extra flavor, toast the burritos in a pan after rolling.
