- 2 cups cooked chicken breast, shredded
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper (optional for extra heat)
- Salt and pepper to taste
- 1 cup cooked rice
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/2 cup salsa
- 1/2 cup shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup sour cream (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Add diced onion and cook for 3-4 minutes until softened.
- Add garlic and cook for another 30 seconds.
- Stir in the shredded chicken, chili powder, paprika, cumin, cayenne pepper, salt, and pepper. Cook for 2-3 minutes until heated through.
- Add the cooked rice, black beans, corn, and salsa. Stir until well combined and heated evenly.
- Warm the flour tortillas in the microwave or on a skillet.
- Spoon the chicken mixture into the center of each tortilla. Top with shredded cheese and sour cream if using.
- Roll up the burritos tightly, folding in the sides as you go.
- Serve warm, garnished with fresh cilantro if desired.
Notes
- For extra flavor, toast the burritos in a pan after rolling.
- You can use rotisserie chicken to save time.
- Swap in brown rice or quinoa for a healthier option.
