Description

These EASY Southern Salmon Croquettes are crispy fried salmon patties made with canned salmon, fresh vegetables, and a hint of seasoning. Ready in just 20 minutes, they make a flavorful and satisfying appetizer or main dish with a Southern twist.

Ingredients

Scale

Dry Ingredients

  • ½ cup flour
  • ¼ cup yellow cornmeal
  • ½ teaspoon seasoned salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder

Main Ingredients

  • 15 ounces canned salmon (drained and flaked)
  • 1 red bell pepper, finely chopped
  • ½ cup sweet onion, diced
  • 1 large egg, beaten
  • 1 teaspoon Worcestershire sauce
  • ¼ cup mayonnaise
  • ¼ cup cilantro, chopped

For Cooking

  • Olive oil for frying

Instructions

  1. Combine dry ingredients: In a large bowl, mix together the flour and yellow cornmeal thoroughly to create the base mixture for the croquettes.
  2. Add wet and main ingredients: Add the drained and flaked canned salmon, finely chopped red bell pepper, diced sweet onion, beaten egg, Worcestershire sauce, seasoned salt, black pepper, garlic powder, mayonnaise, and chopped cilantro into the bowl. Stir everything until well combined and a dough-like consistency forms.
  3. Shape patties: Using your hands, form the mixture into small patties about 2 inches wide. You should get approximately 8 to 10 patties depending on the size you make.
  4. Heat oil: Preheat a skillet over medium heat and add enough olive oil to coat the bottom. Allow the oil to heat until hot but not smoking.
  5. Fry patties: Carefully place the salmon patties into the hot skillet. Fry each side for about 3 to 4 minutes, until they achieve a golden brown and crispy exterior.
  6. Drain excess oil: Once cooked, transfer the croquettes to a plate lined with paper towels to absorb any excess oil.
  7. Serve: Serve the salmon croquettes hot with your favorite dipping sauce such as tartar sauce or a fresh squeeze of lemon for added zest.

Notes

  • Make sure the canned salmon is well drained to avoid soggy patties.
  • Adjust the seasoning to your taste by adding more or less Worcestershire sauce or spices.
  • Use a non-stick skillet to prevent sticking and make flipping easier.
  • For a healthier option, use minimal olive oil and drain well after frying.
  • These croquettes can be served as appetizers, snacks, or a light main course.
