  • 1 cup water or vegetable broth
  • 5-7 tbsp soy sauce (adjust according to taste)
  • 1.5 tsp dark soy sauce (optional, for color)
  • 2-3 tbsp corn starch
  • 1-3 tbsp sugar, maple syrup, or other liquid sweetener (adjust for sweetness)
  • 2 tbsp rice vinegar, white vinegar, or lemon juice (adjust for sourness)
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce or other hot sauce (optional, for spice)

Cooking & Garnishes

  • 1 tbsp sesame oil
  • 2 cloves garlic, minced (optional)
  • Chopped scallions, for topping
  • Sesame seeds, for topping


Instructions

  1. Mix the Sauce: In a bowl, combine all sauce ingredients—water or vegetable broth, soy sauce, dark soy sauce, corn starch, sweetener, vinegar or lemon juice, ground pepper, chili garlic sauce, sesame oil, and minced garlic—until well incorporated. Adjust the balance of sweetness, saltiness, sourness, or spice to taste, and set the sauce mixture aside. For a redder sauce, include the hot sauce. Double the sauce quantities if increasing the amount of noodles or vegetables.
  2. Cook the Noodles: Bring a pot of water to a boil over high heat. Add the ramen or your chosen noodles and cook them for 2-3 minutes less than the package instructions to achieve a chewy texture, ensuring they are only half done.
  3. Drain the Noodles: Drain or strain the noodles well. Optionally, rinse them under cold water to immediately stop the cooking process and to remove excess starch. Set the noodles aside while you prepare the rest of the dish.
  4. Sauté Tofu/Mushrooms/Veggies: While the noodles are cooking, heat a pan over medium-high heat and add a small amount of oil. Add the sliced tofu, mushrooms, or vegetables and sauté until cooked through to your liking, which typically takes a few minutes depending on your choice of ingredients.
  5. Simmer the Sauce: Stir the sauce mixture again to re-incorporate any settled starch. Pour the sauce into the hot pan with the sautéed ingredients and let it simmer over medium heat for 2-3 minutes, stirring frequently until the sauce thickens into a glossy consistency.
  6. Add Noodles & Coat: Add the drained noodles directly into the pan once the sauce has thickened. Mix well to ensure that every strand or piece of noodle is completely coated with the rich sauce.
  7. Finish Cooking: Continue cooking the noodles and sauce together on medium-high heat for about 3 minutes. This step allows the noodles to absorb some of the sauce’s flavors and for the sauce to further thicken and cling to the noodles.
  8. Adjust Seasoning & Serve: Taste the finished dish and adjust seasoning as needed with extra soy sauce, sweetener, or ground pepper. Serve hot, garnished with a sprinkle of sesame seeds and chopped scallions for freshness and added texture.
