An easy and flavorful rice pilaf made with simple pantry ingredients, perfect as a side dish for any meal.

- 1 cup long grain white rice
- 2 tablespoons butter or olive oil
- 1/2 small onion, finely chopped
- 2 cups chicken broth or vegetable broth
- 1/4 teaspoon salt (optional)
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- In a medium saucepan, heat the butter or oil over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the rice and cook for 2-3 minutes, stirring frequently, until lightly toasted.
- Add the broth, salt, pepper, and garlic powder if using. Stir well.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and liquid is absorbed.
- Remove from heat and let stand, covered, for 5 minutes.
- Fluff with a fork and garnish with parsley if desired before serving.
Notes
- For a vegetarian version, use vegetable broth instead of chicken broth.
- You can add diced carrots or peas for extra flavor and color.
- Leftovers can be stored in the refrigerator for up to 4 days.
